Creamy Apple Pumpkin Soup

This is one of the wonderful soup I've ever tasted. It is mild, nutritious and has the perfect blend of flavors. The addition of apple gives a nice sweetness. And the texture is so soft and creamy. This is perfect before any meal.

Ingredients:
2 tsps Butter or Margarine or any unflavored oil
1 cup chopped onion
3/4 tsp dried rubbed sage
1/2 tsp curry powder
1/4 tsp ground nutmeg
3 tbsps all-purpose flour
500 ml vegetable stock or water
1 tbsp tomato paste
1 tsp salt
3 cups deseeded, peeled & cubed fresh pumpkin (1 pound)
1 cup sweet cooking apple, chopped
1/4 cup milk

Preparation:
Melt butter in a big vessel over medium heat. Add onion; sauté 3 minutes. Add sage, curry powder, and nutmeg; cook 30 seconds. Stir in flour; cook 30 seconds. Add broth, tomato paste, and salt, stirring well with a whisk. Stir in pumpkin and apple; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until pumpkin is tender, stirring occasionally. Remove from heat; cool slightly.

Place mixture in a blender or food processor; process until smooth. Return mixture to to the vessel; add milk. Cook until thoroughly heated. Garnish with sage sprigs, if desired.

Pumpkin soup is one of my favourite too.

I love pumpkin soup and have tried a version of it with carrots. But the addition of apple has really taken me aback. It sure does look delicious!
